There is a keybind (the V key) that is, by default, dual-purpose. One of which is to hide the UI. Get out of your vehicle, turn the UI back on, then go into the keybind options menu and swap the 'hide ui' keybind to a key not used by anything else (as it should have been all along). You sort of can with the Better Towing mod. It adds a Parking Brake option to the vehicle mechanics radial menu, and turning it off allows you to push cars with the space bar (same as the push attack animation).
